preparation time: 10 min.
categories: lunch

amount measure ingrredient -- preparation method

2 large slices of italian country bread (crusty on outside, soft on inside)

3 tablespoons of THATS A NICE! Sicilian Garlic spread

2 slices of imported provolone cheese

1 Slice of fresh mozzarella

1 slice of Prosciutto di Parma OR Sweet dried copicola

2 leaves of Fresh Basil

1 slices of fresh tomato

1 tablespoon extra virgin olive oil

to prepare:
Spread THATS A NICE garlic spread on 1 side of each slice.  Heat up pan and add in olive oil.  Place 1 slice bread, (garlic spread down) then stack 1 slices of provolone, basil, tomato, slice of mozzarella, slice of prosciutto, last slice of provolone cheese, and top with remaining bread (garlic spread side up).  Grill until nicely browned and then flip and grill remaining side.  So easy and yet so delicious. Buon appetito.

(can be made with slice of grilled eggplant in place of meat for vegetarian version)

history:
Our grandmother used to make something very similar in Sicily except she just baked it in the outside coal oven.  The garlic spread was a little harder to make because they had to roast the garlic by hand, add the spices and whip it with olive oil to make a creamy spread.  The provolone cheese was made  locally and hung to dry to get the right age, and she made her own mozzarella by hand. Eating this sandwich brings back the old world.  This is a little bit of Sicily in America!
