thatsanice! EGGPLANT BRUSCHETTA

amount measure ingredient -- preparation method
1 medium eggplant
1 loaf Italian or Country Bread -- sliced
2 large tomatoes -- peeled and chopped
5 ounces ricotta cheese -- sliced
1/2 cup extra virgin olive oil
1/4 jar thatsanice"bacio" Sicilian "kiss of garlic" spread
1/2 teaspoon  salt -- to taste
1/2 teaspoon freshly ground black pepper -- to taste
to prepare:
-preheat oven to 375 degrees F. 
-pierce the eggplant with a fork and bake for 30 minutes, or until soft to
 the touch.
-let eggplant cool slightly and cut in half lengthwise.
-scoop out the pulp, and puree in a food processor until smooth.
-season with salt and pepper.
-cut the bread into 1/2" slices.  
-spread
thatsanice"bacio", on each slice and broil in oven or grill until
 bread is toasted. (watch that it does not burn)
-spread the eggplant puree on each slice of toasted bread.
-top with chopped tomatoes and ricotta.
-drizzle with a little olive oil and serve.
