4 medium yellow peppers
4 medium red peppers
2 cloves garlic -- minced
1/2 bunch fresh basil -- minced
1/2 cup extra virgin olive oil
1 loaf Italian or Country Bread
1 pound goat cheese
1/2 jar thatsanice"bacio" Sicilian "kiss of garlic" spread
1/2 teaspoon  salt -- to taste
1/2 teaspoon freshly ground black pepper -- to taste
to prepare:
-roast the peppers on the grill or under the broiler until charred on all
 sides.  turn them as they roast to ensure even cooking.
-peel the peppers while they are still hot, remove the seeds, and cut into
 fine strips.
-in a medium bowl, toss the peppers with salt, pepper, garlic, basil, and
 olive oil.  
-cut the bread into 1/2" slices.  
-spread
thatsanice"bacio", on each slice and broil in oven or grill until
 bread is toasted. (watch that it does not burn)
-if possible, allow roasted peppers  to marinate in the mixture for one to
 two hours before serving.
-top each slice of bread with pepper mixture, their dressing, and some
 crumbled goat cheese.
-drizzle with more olive oil and serve.
