1 1/2 pounds small red potatoes -- washed
1 small red onion -- cut in half, thinly sliced
1 jar (6.0oz) marinated artichoke hearts -- drained & sliced
1/2 cup thatsanice "olivetta" Sicilian olive mix
10 ounces Genoa Salami -- skinned and diced in cubes
6 ounces swiss cheese -- cut into 1/2"cubes
1/3 cup fresh parsley -- minced
1/4 cup extra virgin olive oil
2 tablespoon red wine vinegar
2 teaspoons thatsanice "Sicilian olive mustard"
1/2 teaspoon  salt -- to taste
1/2 teaspoon freshly ground black pepper -- to taste
to prepare:
-cook potatoes until firm but tender (approx. 10 minutes).
-cool potatoes completely, cut into eights.
-in a medium bowl, combine potato, onion, artichoke hearts,
thatsanice
 
"olivetta", black olives, salami, cheese and parsley.
-set aside.
-in a small bowl whisk together extra virgin olive oil, wine vinegar,
 
thatsanice" Sicilian olive mustard", salt and pepper.
-pour vinaigrette dressing over potato mixture; carefully toss.
-serve chilled or at room temperature.
-if possible, allow salad to marinate for one to two hours before serving.

serving ideas:
serve with garlic bread
