1 large flank steak
1/3 cup thatsanice! "olivetta" Sicilian olive mix
1/3 cup italian breadcrumbs
5 slices provolone cheese
3 10" kitchen strings
1 teaspoon ground pepper -- to taste
1/2 teaspoon salt -- to taste
1 teaspoon granulated garlic
1/3 cup extra virgin olive oil 
to prepare:
-preheat oven to 450 degrees F.
-lay flank steak on cutting board, with very sharp knife, butterfly steak
 by  slicing it in half, open like a book, leaving 1 side still attached.
-spread thatsanice"olivetta" over the flat side.
-sprinkle breadcrumbs over olivetta.
-lay slices of provolone cheese over olivetta and breadcrumbs.
-close steak with other half.
-roll steak up so the grain is running the length of the roll (direction of
 the grain is important, since flank steak needs to be finely cut against
 the grain).
-tuck cheese inside.
-tie securely in several places with kitchen string.
-sprinkle with garlic, salt and pepper.
-in a large skillet, heat and add olive oil and sizzle steak roll until all
 sides are brown.
-take large skillet and place in oven or (place in a baking dish, if the
 handle cannot be placed in the oven). 
-bake for 20 minutes.
-remove from oven, cover with foil, let stand for 10 minutes before
 slicing on an angel into 1/2 inch slices.

 
serving ideas:
serve with Italian salad and your favorite red wine.
